Candied Cinnamon Rings

Day One

2 Gallons cucumbers, peel, seed, slice into 1/4 inch rings.
Mix 2 Cups lime
4 gallons water
Cover rings and let stand 24 hours

Day Two

Drain and wash rings. Let stand overnight in clear water to cover.

Day Three

Drain rings, simmer 2 hours in a mixtured of:
1 Cup vinegar
1 t. alum 1/2 bottle red food coloring.
Water of cover. DO NOT BOIL!
In another pan mix:
2 Cups vinegar
10 Cups sugar
7 or 8 cinnamon sticks
6 oz. pkg. red hot candies
Bring mixture to a boil and boil 5 minutes. When rings are done, drain. Put rings in pan and pour syrup over rings and let stand overnight.

Day Four

Drain syrup into a pan, add 1 cup vinegar, bring to a boil. Boil 5 minutes. Pour over rings and let stand overnight.

Day Five

Repeat day 4

Day Six

Repeat day 4

Day Seven

Drain rings reserving syrup. Bring syrup to a boil. Pack rings in jars, cover with syrup and seal.
