Corn Relish

2 1/2 qts. corn kernals cut from cobs
1 c. chopped green pepper
1 c. chopped sweet red pepper*
1 1/4 c. chopped onion
1 c. chopped celery
1 1/2 c. sugar
1 T. salt
1 t. celery seed
1/2 t. tumeric
2 2/3 c. vinegar
2 c. water
*You may substitute a jar of pimiento, and increase green pepper to 2 cups.

Boil corn five minutes. Plunge into cold water. Cut kernals from cobs and measure. Combine all ingredients and simmer for 20 minutes. Five minutes before simmering is complete, thicken with a solution of corn starch and water. Continue simmering until thickened. Pack into hot sterilized jars leaving 1" headspace. Yields about 7 or 8 pints.
