Cheescake:
3 eggs seperated
3/4 cup sugar
2 pkgs (8oz) cream cheese
graham cracker crumbs
Butter mini-muffin pans and sprinkle to coat with graham cracker crumbs.
Cream egg yolks, sugar and cream cheese together. Beat egg whites until stiff. Fold into cream cheese mixture. Fill pans 3/4 full. Bake 20 minutes at 350. Let cool for 10-15 minutes before removing from pans.
Topping:
1 pkg (8oz) cream cheese
3/4 cup sugar
1/2 teas vanilla
Mix all ingredients together in an oven-proof bowl. Bake for 5 minutes at 400. Stir and return to oven for 3 minutes longer. Spoon by teaspoonful onto cakes. Cool. Refrigerate.
