Fancy Coconut Pound Cake


A really good crowd pleaser, especially around the holidays.

5 eggs
2 cups self-rising flour
2 tbls coconut extract
1 teas vanilla
2 cups sugar
1 cup vegetable oil
3 cups shredded coconut

Mix all ingredients together and bake in bundt pan for 1 hour. Remove from oven, cooling in pan for 10 minutes then remove to plate. Poke holes in cake and pour icing over cake.

Icing

1 cup sugar
1/2 cup butter
1/2 cup water
1 tbls coconut extract

Bring this mixture to a boil and pour over cake. Cool.
