3 cups fresh yellow squash
2 med chopped onions
3 tbls margarine
1 cup grated sharp cheddar cheese
1 cup crushed Ritz crackers
salt and pepper to taste
Boil squash and chopped onion in water until tender, drain. Season to taste with salt and pepper.
Beat margarine and eggs together. Add squash mixture and pour into greased 2 qt casserole dish. Bake at 350 for 45 minutes. Cover with cheese and crackers. Return to oven until cheese melts.
