Fresh Strawberry Cake


Spring in Tennessee brings an abundance of yummy strawberries and thoughts of this great cake. Icing recipe follows.

1 pkg yellow cake mix
1 pkg strawberry jello
1 cup strawberries, fresh or frozen
1/4 cup vegetable oil
1/4 cup water
4 eggs

Mix all ingredients well. Pour in 3 greased and floured layer cake pans. Bake in a 350 degree oven until golden brown. Cool cakes then spread icing between layers and on top.

Icing

1 8oz. pkg cream cheese
1/4 cup margarine
1 cup confectioners sugar
1 cup coconut
1 cup chopped pecans
1 cup strawberries, fresh or frozen

Melt cream cheese and margarine in a saucepan over med heat, add sugar. Remove from heat. Add coconut, pecans, and strawberries. Mix well. Add confectioners sugar to desired consistancy.
