Nothing better than old fashion, made from scratch, Carrot Cake!!
2 1/2 cups grated carrots
3 cups sifted flour
2 cups sugar
1 1/2 cups vegetable oil
2 teas baking powder
2 teas baking soda
2 teas cinnamon
1 teas salt
1 teas vanilla
1 cup chopped nuts
4 lg eggs
Sift dry ingredients, flour, baking powder, soda, cinnamon and salt. Mix oil and sugar thoroughly into flour mixture, adding one egg at at time. Add grated carrots, mixing well. Add vanilla and nuts. Grease and flour 8 or 9 inch cake pans or a 10 inch bundt pan. Bake until golden brown. Bundt pan about an hour. Cake pans about 30 minutes. Frost with icing below.
Carrot Cake Icing
1/2 cup margarine
8 oz. cream cheese
1 pd. confectioners sugar
1 cup chopped pecans
Cream together all ingredients and ice cake.
